Key Responsibilities
- Lead, train and manage the kitchen team.
- Oversee daily kitchen operations and service.
- Develop and update seasonal menus.
- Maintain food quality, presentation and portion control.
- Manage food, labour and kitchen costs.
- Coordinate suppliers, purchasing and inventory.
- Monitor stock rotation and reduce food waste.
- Ensure compliance with food safety and workplace safety standards.
- Develop kitchen procedures, recipes and operating systems.
- Recruit, schedule and manage kitchen staff.
Requirements
- Previous experience as a Head Chef or Senior Sous Chef in a high-volume restaurant.
- Strong leadership and team management skills.
- Knowledge of modern Australian cuisine and current food trends.
- Experience managing food and labour costs.
- Understanding of food safety and HACCP principles.
- Strong communication, organisation and problem-solving skills.
- Ability to work under pressure while maintaining high standards.
